A lesson from a Melbourne gelato counter
On a recent trip to Melbourne, we found ourselves in front of a gelato counter with about 30 flavours and a very friendly person holding a tiny spoon.
We tasted a few. Then we did exactly what the samples were designed to make us do: we bought the gelato. No regrets.
Walking out, it struck me that the whole experience was a near-perfect picture of how professional services work. Including the bit that can quietly go wrong.
The dairy versus the gelato shop
Think about grabbing an ice cream at your local dairy. You see the standard flavours, you ask for a scoop, you get a scoop. You like it or you don't, and it may or may not end up on the footpath. Nobody offers you a taste first, and nobody expects them to.
A good gelato shop is a different experience entirely. More choice, more care, more conversation. They'll happily let you try before you buy, because they're proud of what they make and they know that once you've tasted it, you'll want more.
That's the boutique difference. You pay a little more, and you get a lot more: quality, attention and someone who genuinely wants you to walk out happy.
The sample spiral
We've all seen it happen. Someone steps up to the counter and asks for a taste. Then another. Then another.
"Can I try that one? Ooh, and that one? Actually, can I go back to the first one?"
Meanwhile, the queue is growing behind them. The person with the tiny spoon is smiling, because that's their job, but they're also watching five other customers wait their turn.
At some point, a quiet question hangs in the air: how many samples does it take before you've basically eaten an ice cream?
To be clear, this isn't about anyone being a bad customer. Usually they're just excited, or a little unsure, or nobody's ever told them where the line is. Samples are meant to be generous. That's the whole point.
What you don't see behind the counter
Here's the part most customers never think about. Every sample costs the shop something: a little gelato, yes, but mostly time.
If the team spends all their time handing out tastes, the queue doesn't move. To serve everyone else, the shop has to hire another person. That means more wages, more cost, and eventually, higher prices for everyone.
Then the new customers start sampling too. Before long, the shop is effectively giving away free ice creams, and the people who simply walked in and bought one are the ones paying for it.
Accounting is a gelato shop
Professional services work exactly the same way, except our gelato is time and expertise.
At a boutique firm like ours, the samples look like this: a quick phone call, a "what do you reckon?" email, a five-minute question that turns into a twenty-minute conversation, a spreadsheet glanced over "while you're at it". We love giving those tastes. They're how you find out we're fast, sharp and genuinely on your side.
But a tangible product is easy to value. You can see the scoop. Advice is harder, because it often looks like a conversation. The thinking behind it, years of training and the hundreds of similar situations we've seen, is invisible.
So it's easy, without meaning to, to keep sampling. One more question. One more quick look. And somewhere along the way, the sample has become the ice cream.
Our side of the counter
The best gelato shops don't stop giving samples. They just know when to say, "Sounds like you've found a favourite. Shall I scoop you one?"
That's our job too. We'll always be generous with a taste, because that's how good relationships start. And when a question grows into real work, we'll tell you so, kindly and upfront, with a clear idea of what the full scoop looks like and what it costs. No surprises, no awkwardness.
And for our clients, here's the gentle nudge: when you feel yourself reaching for sample number six, it's probably time to order. You'll get far more out of the whole cone than a dozen tiny spoons.
Get the whole cone
In Melbourne, the samples did their job beautifully. They told us we'd love it. But the real joy was the gelato itself, cone in hand.
That's how we see our work. A sample tells you you'll love it. It was never meant to be the ice cream.
If you've been tasting for a while and you're ready for the full scoop, we'd love to help. Get in touch with the team.
